Indian Vibrant Breakfast - Masala Vegetable Uttapam

Ingredients:

* 1 cup dosa batter (fermented rice and lentil batter)
* 1/2 cup mixed vegetables (finely chopped, such as bell peppers, onions, tomatoes, carrots)
* 1 green chili (finely chopped, adjust according to spice preference)
* 1 tablespoon chopped coriander leaves
* 1/4 teaspoon cumin seeds
* Salt to taste
* Oil or ghee (clarified butter) for cooking

Instructions:

1. In a mixing bowl, combine the dosa batter and salt. Mix well to ensure the salt is evenly distributed.
2. Heat a non-stick pan or tawa on medium heat and lightly grease it with oil or ghee.
3. Take a ladleful of the dosa batter and pour it onto the center of the pan.
4. Using the back of the ladle, spread the batter in a circular motion to form a thick pancake-like shape.
5. Sprinkle a portion of the mixed vegetables, green chili, chopped coriander leaves, and cumin seeds evenly on top of the uttapam.
6. Drizzle a little oil or ghee around the edges of the uttapam and on top of the vegetables.
7. Cook the uttapam on medium-low heat for a few minutes until the bottom side turns golden brown and crisp.
8. Gently flip the uttapam using a spatula and cook the other side for a few more minutes until it turns golden brown.
9. Once cooked on both sides, transfer the uttapam to a serving plate.
10. Repeat the process with the remaining batter and toppings to make more uttapams.
11. Serve the masala vegetable uttapam hot with coconut chutney or tomato chutney.
