Black Bean Chicken

INGREDIENTS

200g chicken
1 cup cooked black beans
½ cup red onion
½ cup corn, roasted
3 limes, juiced
1 tablespoon garlic
1 teaspoon cumin
1 teaspoon coriander
1 jalapeño pepper


METHODS/STEPS

1- Sear Chicken until brown.
2- Flip chicken add remaining ingredients except coriander
3- Cover and turn down to low heat.
4- Cook for 5 minutes more. Add cilantro and cook 1 minute more.
